Hearty Pasta Salad
 

INGREDIENTS

 
8 ounces dry spiral pasta
1/3 cup cooked red beans
1/4 cup diced onion
1/3 cup diced celery
1/4 cup sliced black olives
1/3 cup of diced tomato
2 tablespoons vegan mayonnaise
1 tablespoon red wine vinegar
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon basil
1/4 teaspoon crushed garlic
1/4 teaspoon oregano
 

DIRECTIONS

 
Cook the pasta until softened. Drain the pasta and allow it to cool. Mix the mayonnaise, vinegar, olive oil, and spices in a small mixing bowl. Add the mixture to the pasta and stir. Add the beans and vegetables and stir until the ingredients are all well combined. Serves 4 to 6.
