Pita Salad Sandwich
INGREDIENTS
4 pita bread halves
1/2 cup diced cucumber
1/2 cup shredded iceberg lettuce
1/2 cup diced tomato
1/2 cup diced green onion
1/4 cup sliced green olives
1/2 cup vegan mayonnaise
DIRECTIONS
Mix the vegetables and vegan mayo together in a bowl. Stuff each pita bread half with 1/4 of the veggie mix. For an especially hearty meal, serve with
