Mashed Potatoes and Gravy
 

INGREDIENTS

 
4 large potatoes
8 tablespoons vegan margarine
3 tablespoons plain soy milk
2/3 cup unbleached flour
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon sage
1/4 teaspoon basil
1 pinch of pepper
 

DIRECTIONS

 
Peel and wash the potatoes. Cut them into one inch cubes and boil until softened. Drain the water from the potatoes and add 2 tablespoons of the margarine. Mash the potatoes until the lumps are gone. Stir in the soy milk. Keep the potatoes warm on low heat.
 
Melt 6 tablespoons of margarine in a large skillet on a setting halfway between low and medium heat. Stir the flour into the margarine until all of the flour is covered with margarine. Add about 1/2 cup of water and stir until the water is almost absorbed. Continue adding small amounts of water (about 1/4 cup at a time) and stirring until the mixture has the consistency of gravy. Stir in the salt and spices. Pour the gravy over each individual serving of potatoes. Serves 4 to 6.
