Stuffed Peppers
 

INGREDIENTS

4 green, red, or yellow bell peppers
4 slices whole wheat bread
2 cups mashed potatoes
2 cups cooked rice
1/2 medium white onion - diced and sauteed
2 1/2 cups tomato sauce
1 teaspoon salt
1 tablespoon basil
1/2 tablespoon oregano
1/2 teaspoon crushed garlic
 

DIRECTIONS

 
Crumble up the bread and mix it with the mashed potatoes, onions and rice to create a stuffing. In a separate bowl, mix the tomato sauce with the salt and spices. Add 2 cups of the tomato sauce to the stuffing and mix thoroughly.
 
Cut in a circle around the stem of each pepper and remove the stem. Clean the seeds from the inside and place one fourth of the stuffing in each pepper. Pour the remaining sauce over the to of the peppers. Cover and bake at 350 for 25 to 30 minutes. Serves 4.
