INGREDIENTS

 
8 small or 6 medium potatoes
1/3 cup onion
1 small yellow squash
1 small zucchini squash
1 carrot
6 tablespoons vegan margarine
1/4 teaspoon basil
1/4 teaspoon crushed garlic
1/2 teaspoon salt
1/2 teaspoon onion salt
 

DIRECTIONS

 
Cut the potato into cubes. Slice the squash and carrot into 1/2 inch sections. Chop the onion finely. Melt the margarine in a large skillet and add the potato, carrot, and seasonings. Cook on medium heat, stirring occasionally. When the potatoes are about halfway cooked, add the squash. Continue to cook until the potatoes are soft. Serves 4 as an entree and 6 as a side dish.
