In a 9 inch skillet, melt 1 tablespoon of margarine on medium heat. When the margarine is melted, place the batter in the pan-- three pancakes per batch with each pancake being about 3 inches in diameter.
Cook until the edges begin to brown and air holes form on the top. Flip the pancakes and cook until the other side is golden brown. Place the pancakes on a plate, with the hottest side facing up. Add the remaining margarine and repeat this process for the second batch.
Makes about 6 potato pancakes.
